Hayvansal ve hayvansal yan ürünlerin beslenmeden çıkarıldığı vegan diyetler son yıllarda popüler hale gelmiştir. Ancak bu diyet türünün değerlendirilmesi bilimsel literatürde yeterince ele alınmamıştır. Diğer tüm diyet türlerine kıyasla makrobesinler açısından protein alımı daha düşük olan vegan beslenmede ayrıca Vitamin B2, Vitamin B3, Vitamin B12, Vitamin D, iyot, çinko, kalsiyum, potasyum, selenyum gibi mikrobesinlerin alımı da düşüktür. Ayrıca veganların çoğunda kalsiyum alımı tavsiye edilenin seviyenin altındadır. Diğer diyetlere göre yağ alımı açısından önemli bir fark olmayan vegan diyetler A, B1, В6, C, E vitaminleri, demir, fosfor, magnezyum, bakır ve folat eksiklikleri gibi sağlık bozuklukları açısından direkt sorumlu değildir. Vegan diyetlerin en önemli olumlu özelliğinden birisi düşük glisemik yüke sahip olmasıdır. Vegan diyetle beslenen bireyler potansiyel diyet eksiklikleri riskinin farkında olmalıdır. Bu derleme yaşlı popülasyonlarda makro ve mikro besin alımları açısından vegan diyetinin alımı, yeterliliği ve bu tür bir diyetin insan sağlığı için gerekli tüm besinleri sağlamada kabul edilebilir düzeyde olup olmadığını değerlendirmeyi amaçlamaktadır.
